Between 165 and 566 Barton Boulevard, Rockledge now has three owner-run breakfast restaurants open, and a fourth already has a state inspection on record. The newest one, Gump's Golden Griddle at 200 Barton Blvd., was reviewed in Florida Today on Sept. 25, 2026. Rocket Bagels, a Rockledge original, has filed plans for 566 Barton Blvd., Suite 10.
These places share a pattern. Each one started somewhere smaller: a weekend-only kitchen, a restaurant run under another brand's name, or a strip-center suite on another road. When the owners were ready to grow, they came to Barton. That history explains what the street serves today. It's scratch-made breakfast and lunch from people who have been doing it for years, and most of these kitchens close by early afternoon.

The diner that outgrew its weekend schedule
Rockledge Diner was already on the street a decade ago. In May 2016, Florida Today's Lyn Dowling found it in a strip center off Barton Boulevard. The only sign said "Diner." It was open 7 a.m. to 2 p.m., Saturday and Sunday only. A registered nurse and a businessman owned it, and they ran it on weekends "because they love it." Dowling called its corned beef hash some of the best you'll ever have. It came with real corned beef, cubed peppers and onions, and a crisp bottom, and it cost $8.99 at the time. In that same review she ran into former Rockledge Mayor Larry Schultz and his wife Wanda at a nearby table.
Its schedule looks different now. A directory listing updated in November 2025 shows the diner open every day of the week. Most days run from 8 a.m. to about noon or 1 p.m., and Friday adds a 4 to 7 p.m. window. Hours at small diners change, and the listing points customers to the diner's Facebook page for updates. Check there before a weekday visit.
The pancake house that bought its building
My Island Pancake House at 165 Barton Blvd. followed the same path on a bigger scale. Kelly, a nurse for more than 30 years at Rockledge Regional Medical Center, and Steve, a U.S. Army veteran with a career in retail management, opened Merritt Island Pancake House in 2017. They kept their full-time jobs and opened only on weekends. Within the first year, regular guests convinced them to open seven days a week. Then, in the middle of the pandemic, they bought a building in Rockledge and opened My Island Pancake House there in September 2020.
That building on Barton was where the business started to grow. The family says it now runs three pancake houses in Brevard County, the newest in Melbourne. They also opened My Island Smokehouse, a barbecue spot in Cocoa, in November 2023. Their daughter Katie joined when the Rockledge location opened and now oversees all of their restaurants. The state's food-service license for the Barton address shows "Current, Active." The restaurant serves breakfast and lunch and has a garden salad bar.
Gump's Golden Griddle and the six years behind a new name
Gump's Golden Griddle is the 2026 version of the same move. Co-owner Makayla Gump told Business Debut in July that she and her husband, Kyle, owned the C's Waffles on 524 in Cocoa for about six years. Barton is where they rebranded under their own family name. "We haven't lost any of our staff from the previous restaurant," she said.
The plan she described:
- A dining room seating close to 80 guests
- Scratch-made breakfast and lunch, including corned beef hash made from brisket cooked in house, eggs Benedict, French toast, steak and eggs, and biscuits and gravy
- Open seven days, 6 a.m. to 2 p.m., with dinner a possibility later
- A path for long-serving employees to take a percentage of future locations
The ownership model is already in use. Co-owner Michael Muccino, who worked with the Gumps for years, is a part owner of their planned Titusville restaurant. That location will use the same menu as Rockledge.
The Gumps had aimed to open by August 1, depending on final licensing. No source gives an exact first day. Dowling's Sept. 25 review in Florida Today confirms it was serving by then, and her headline calls it a place that "knows breakfast and lunch - and does it well." The formal grand opening is still ahead. The chamber calendar lists a ribbon cutting at 200 Barton Blvd. on Wednesday, Nov. 4, 2026, from 10 to 11 a.m., with the ribbon cut at 10:30.
Since 2016, Barton has gained three breakfast restaurants built on brisket hash, scratch biscuits and corned beef. All three are run by owners who proved the concept on a smaller scale first.
Rocket Bagels: the hometown shop moving across town, maybe
Rocket Bagels is the one still pending, and the details are still unsettled. The deli was started by two New York City-trained chefs. It brings its bagels in from New York and makes everything else in house, including roast beef and spreads. In October 2025, Space Coast Daily listed the Rockledge flagship at 3705 Murrell Road #105, open daily from 6 a.m. to 2 p.m., and a second shop at 6725 N Cocoa Blvd. in Port St. John.
On July 2, 2026, WhatNow reported that the Murrell Road shop showed as "Temporarily Closed" on Google Maps. It also reported that Rocket Space LLC had filed plan-review paperwork for "Rocket Bagels Rockledge" at 566 Barton Blvd., Suite 10. WhatNow couldn't say whether this was a relocation or an additional store, and owner Wisasha Garcia wasn't available for comment.
Since then there has been one more sign. Florida Today's restaurant inspection database lists Rocket Bagels Rockledge at 566 Barton Blvd., Ste. 10, with an inspection dated Sept. 30, 2026. The company's own Rockledge page shows the Barton address but lists the shop as closed every day. Other text on the same page still names Murrell Road as one of its two locations. As of early October, the safest description is "coming soon." WhatNow points readers to the shop's Instagram, @rocketbagels, for updates.
If the Barton shop opens with the same 6 a.m. start the Murrell Road shop had, the strip will have two kitchens serving before sunrise in the fall, at 200 and 566.
Where the chain landed instead
Turning Point is the other breakfast opening nearby this year, and it chose a different kind of address. The daytime breakfast, brunch and lunch chain opened its first Brevard County location at 1995 Viera Blvd. Florida Today reported it open on July 27, 2026, serving 7:30 a.m. to 3 p.m. daily, with vegetarian and vegan options. Florida Today places it in Viera. A June preview from WhatNow called it Rockledge. Either way, it's out on the Viera Boulevard corridor, about the same stretch where Fatburger opened in May.
That leaves two kinds of breakfast within a short drive of each other. The national names cluster in new development along Viera Boulevard. On Barton, local owners are on their second or third restaurant, in buildings like the one My Island bought and in older strip centers like the one Dowling described in 2016.
A fall morning on Barton, sequenced
Hours are the main thing to plan around. Here's how a weekday currently lines up, based on posted and planned hours:
- 6 a.m. Gump's Golden Griddle is planned to open, the earliest start posted on the strip.
- 8 a.m. Rockledge Diner's most recent listed weekday opening.
- Noon to 1 p.m. Rockledge Diner's weekday kitchen closes on its recent listing.
- 2 p.m. Gump's planned close.
My Island Pancake House serves breakfast and lunch, and its own site has current hours. The Gump's ribbon cutting on Nov. 4 falls midmorning on a Wednesday, with the ribbon cut at 10:30. If you'd rather eat in the evening, the city's Food Truck Friday is at Larry L. Schultz Park, 2540 S. Fiske Blvd., on Oct. 9 and Nov. 13 from 4:30 to 7:30 p.m.
